Khichdi - simple and tasty

I am at times amazed by how simple cooking can be, and yet be so tasty. Don't mean this as a boast, but just that cooking and Indian cuisines leave me in awe!

Khichdi (or kichdi, as said in some southern parts of India :) is as simple as it gets.

1) Roast cumin seeds in oil.
2) You can add a little bit of red chilli powder here.
3) 1 cup of moong dal : 3 cups of rice
4) Mix and gently fry them a little, so the oil sticks to the entire stuff and prevents it from becoming sticky.
5) Add 8 cups of water (1:2) to the above and cook it to a boil. Keep partially open for a while, and then you can leave it in a pressure cooker or electric cooker.
6) Add salt to the boiling water and rice, and let it cook to finish.

Ready to serve! Very tasty with either mango pickle or yogurt raita or just like that. Healthy and simple.
